Dollarama Spring Finds

We had crazy hot weather here last week - I felt like I was back in California! And there's nothing like some good ol' sunshine that puts me in the mood to springify up our home a bit. My sister-in-law and I went thrifting and Dollarama shopping the other day and I was impressed with what Dollarama had for spring decor. I only bought a couple things but they add a nice touch to our fireplace mantel, and for a couple bucks a piece, that's a score.

Aren't these so cute? They had them in light blue and light green as well but I went with the cream.

I loved these birds, they are so pleasantly plump but I didn't love their color. However, I had some white spray paint laying around the house that would easily fix the problem. Which by the way is a cheap and easy decorating tip, there's been plenty of times where I saw candlesticks, ceramic vases, figurines, etc. at the thrift store  but wasn't a fan of the color, but with some spray paint love, they look fantastic!

Ta da! I just sprayed them, then roughed them up with some sand paper so that they wouldn't look so stark white.

Everything but the mirror, green plant, and vase with the white flowers are from previous thrift and Dollarama runs. Those candlesticks were from Value Village and were  an ugly brown color before I sprayed them a nice classic black.
Bring on Spring!

Easy Berry Buttermilk Cake

Do you ever wonder why they don't sell buttermilk in smaller sizes? When I need to buy buttermilk for a recipe, I typically only need a 1/2 cup or so then usually end up tossing the rest of it later. Well, I found a great cake recipe where if you have extra buttermilk sitting around, (you'll probably have the rest of the ingredients in the house as well), this would put it to good use.

This is such a quick and easy cake to make, the texture and taste is more like a coffee cake than a cake-cake, it really takes just a few minutes to whip together and you can use whatever fruit you want in it, even top it with cinnamon and sugar to make it more coffee-cake-ish. I didn't have any fresh raspberries on hand so I used some frozen mixed berries instead - the result was delicious!

Gnocchi

To me, gnocchi was one of those things, like souffle, that sounded really intimidating to make. But I saw a recipe in my Food Network magazine last week that looked pretty easy so I decided to give it a try. Verdict? Like making a souffle, it's so much easier than you'd think and the end result is a dish that conveys decadence and fanciness, disguising its simplicity. I only made the gnocchi part in this recipe and made my own sauce. As yummy as I'm sure it would be, throwing the gnocchi into a ton of butter kind of grossed me out. But try making the gnocchi, you won't be disappointed!

You will need a ricer, which is this funny looking clamp thing in the above pic. It basically mashes the potato for you with one push down, ensuring that you don't overmash the potatoes, creating a glutinous mess. I normally use this to make my mashed potatoes.

Also, instead of baking the potatoes, if you want a shortcut, just microwave all of them at the same time (after pricking with a fork). About 8 minutes or so depending on the size of your potatoes. This makes the recipe super easy and super quick to make.

Cut up into bite-size pillows

These cook really fast, like 3 minutes fast. When you first throw them in they'll sink to the bottom but when they're done cooking, they'll begin popping up to the surface.

Once they're done cooking you can just scoop them up and throw them into the sauce of your choice. Matt's not a big pesto fan (which is how they're popularly served) so I decided to serve them in a spinach bolognese sauce. Gnocchi is great in being so versatile, they can be served whichever way you like.

The gnocchi was so soft and fluffy, definitely a keeper!

And here are some of the latest shots of the two cutest kids in the world:

First frappucino experience, I don't think he really liked it:)

Such a boy. He was actually doing a really good job!

Roxy Crockett!

Informally trying to potty-train him and although this picture might convey enthusiasm for going on the toilet, in reality, he's not having any of it.

My Hubs is 30!!!

Saturday, March 3rd, was my Hunny's 30th birthday! It's about time he joined me in this decade - I don't feel as much as a cougar now that our ages share the same first digit:)

Happy Birthday Baby! You are the best man I know; you are godly, funny, compassionate, wise, and hot and you are an amazing husband and dad and we are so blessed to know and love you!

Being the low-key guy that he is, Mattie just wanted to celebrate with the family and just be together rather than have a big shindig so that's what we did.

Birthday breakfast in bed

Then later on that night we celebrated with a family dinner with the rest of the fam. Everyone contributed something to the meal and it was all delicious! Way to go Team Sylvester!

I made these "Four Leaf Clover Broccoli Cheddar Rolls" from you guessed it - this awesome bread book! and they turned out really good. And not like I ever do anything to commemorate St. Patrick's Day, but these would be perfect for the holiday and a great way to sneak in those green veggies.

Will definitely make again

I asked Matt what kind of cake he wanted this year and he said he wanted a light, lemony, strawberry one so I made yellow cake, layered with lemon curd and lemon mousse, topped with fresh strawberries.

Turned out pretty tasty

He did it! Total pro.

And here's a little video of the Monkey. I can't get over how much he's speaking, it seems as though every day he's saying new words and putting them together in phrases and mini-sentences, it's so crazy! So much of it will be him remembering me mention something and not exactly from me teaching him the word; my son is constantly impressing me with his memory and ability to articulate - enjoy the cuteness:
